A Family Favorite

Do you know what I think is possibly the best thing about church meetings?

THE FOOD, of course!

Tonight we will be attending a small home group meeting, and we learned a month ago at the one other similar meeting we attended that there will be no reasonable "business" conducted until everyone is properly stuffed and immobile fed.

Earlier this week we were sent email direction indicating that main dishes and drinks will be provided, leaving the side dish selections and desserts for us to bring.

My thoughts turned immediately to a summer salad recipe that is one of our family favorites.  If you can cut things up and mix them with a spoon, then you can make this easy dish.

Ingredients for "Summer Salad:"

1 head of cauliflower
2 large broccoli florets
3 or 4 small tomatoes
1 jar of medium black olives, drained
1/2  small jar of green olives, drained
1 bottle Kraft Zesty Italian dressing


Of course you can double or triple the recipe if you are feeding a larger crowd.

The directions are simple.  I suggest making this salad the day before your event, so it has plenty of time to marinate in the dressing.

Cut up the cauliflower, broccoli and tomatoes into small florets or pieces.


Add the olives.

Shake the dressing and pour over all.  Mix thoroughly.


Refrigerate.  Stir occasionally so the salad is fully marinated by serving time.

This is a colorful and delicious side dish that is usually a hit wherever we take it.  Don't be surprised though if some of it disappears before your meal...


I guess that's just a sign of a good recipe.  This one's a keeper.  ENJOY!
