One Leg Pulled Pork Sandwiches

Since I'm having company and will most likely not be blogging tomorrow on the holiday, I will take time right now to wish you all a happy Fourth of July.  I will be tied up with other cute things - daughter Lindsay and granddaughter Ellie are coming for a visit.


Anyhoo, I thought I'd share with you a very simple picnic-y type recipe I put together that is totally delicious, fills the house with awesome smells throughout the day, and is easy enough that even I, on one leg, could put it together.  Thus, I named it ONE LEG Pulled Pork Sandwiches.


Ingredients are few and easy:
2 pounds pork tenderloin
12 ounces root beer
18 ounce bottle of barbecue sauce
sandwich buns


Simple one leg directions:  (You should try this.  It's like a mini core workout right in the privacy of your own kitchen.  Or heck, just let one of your kiddos make the recipe.  It's THAT easy.)

Put the meat in your crock pot.
Add the root beer.
Cover and cook on low about 6 or 7 hours.
Drain well and shred the pork using two forks.
Stir in the barbecue sauce.
Serve on buns.


This will be an easy meal for us, as I'll serve it with potato salad or (easier yet) potato chips, pickle spears, and a fruit platter.  

Now that's what I call good picnic food.

  3. I'll trade you a piece of my cake for a pulled pork sammie!! And, no, I could not do it standing on one leg, but it does sound easy enough to do with one hand tied behind my back. Good recipe!!

  4. Thanks, Jill! I'm going to have an open house on Sunday evening and that's what I'm going to make. The local grocery store had a sale on p. tenderloins a week ago and I bought 2.
