Dredging the Bottom

Do you ever have those nights when dinner is put together by Dredging the Bottom?

We had one of those nights last night at our home.  Having been away for the last four days, and having had a whirlwind of a week prior to that, our food reserves were just really low.  Well, I blame it on being away, but the reality is that sometimes I seem to avoid grocery shopping like the plague.

So, Dredging the Bottom is simply scraping a meal together from what little scraps and piles may be found laying around.  Still useful ingredients may be found buried under those four year old freeze pops in the bottom of the freezer, hiding way out of view in the back of the meat and cheese drawer, pushed to the far recesses of the veggie drawer, or smashed under the newest loaves of bread.

Those are the exact locations of foodstuffs I found and used to make a quick meal last evening.  Hence, a Dredging the Bottom recipe.

Here's the mish-mash of ingredients I dredged up:

5 hamburger buns
3 hot dog buns
1/4 stick of butter
1 package of frozen chicken minute steaks (this needed to be the heart of the recipe)
1/2 of a green pepper
1/4 of an orange pepper
1/2 cup chopped purple onion
1/3 cup of shredded colby jack cheese
1/2 cup of shredded cheddar cheese
4 slices of a tomato
7 slices of a cucumber
1 dill pickle spear

I spread all the stuff out on the counter, looked it over, and decided to go for it.  
Dredging the Bottom -----> Chicken cheesesteak sliders with a side garnish.

If in doubt, just start cutting stuff up, and then throw it into a pan.  It usually works for me.

First I sauteed the chopped green pepper, orange pepper, and purple onion in some butter.

Then I tore the chicken minute steaks into pieces and added it to the mix.

I continued to cook and stir the mix until all the chicken was cooked, and then topped it all with the shredded cheese.  

I covered the mix and removed it from the heat for about one minute, so the cheese would melt.

Add to buns and devour.  I don't think the husband and son had any clue that I was Dredging the Bottom to put out this meal.  At least it was colorful, and they said it was delicious.


Oh, and that one dill pickle spear?  I just ate it.  

It really didn't fit into the recipe at all.

  2. When the larder gets that low around our place, we order take out, not that we're lazy or anything... ;c)
