Pork Chops with Stuffing and Apples

I have a large three ring binder into which I have organized all the recipes I have clipped over the years.  We all know how recipe collecting goes:  something looks good, you clip the recipe, file it somewhere, and who knows if or when you ever did or will make that recipe.  Right?

So, I've decided to start at the beginning and one day at a time, make each and every one of the recipes I've collected in that book.  We will keep the keepers, and toss the losers.  The recipe for Pork Chops with Stuffing and Apples I will share here is one I have had a very long time, but never actually made.

First gather up your ingredients:

4 to 6 boneless pork loin chops, about 3/4 inch thick
1  package (6 oz.) Stove Top Stuffing Mix for Chicken
1  can (21 oz.) apple pie filling
Pam Cooking Spray


Directions:

Heat your oven to 375 degrees.

Spray your 13 x 9 inch baking dish with Pam.


Prepare the stuffing mix according to the directions on the package.


Spread the pie filling onto the bottom of your baking pan.


Lay the pork chops on top of the apples.


Spread the stuffing mix over the pork chops.


Cover the pan with foil and bake at 375 degrees for 30 minutes.

Uncover the pan, and bake an additional 20 minutes or until the chops are cooked through.

Serve and enjoy with something more colorful than corn.


Post-meal Notes:

This recipe is a keeper, both as a main dish and as a side dish.

Although we thoroughly enjoyed the unique mix of salty and sweet flavors in this dish, I think the next time I make this recipe, I will precook the meat a bit, and/or brown it some prior to putting all the ingredients together.  

I could see using just the stuffing mixed with the apple pie filling as a yummy but oh-so-simple side dish for a Thanksgiving or other holiday meal.  It was delicious.
