Gather up the ingredients you will need:
macaroni and cheese
ham lunchmeat
paprika
I had a debate with myself prior to making this recipe: do I want to make the macaroni and cheese from scratch (no I do not) , or do I want to do it the easy way?
The decision was not a hard one, as there is a place in my town, Country Cupboard, that makes a macaroni and cheese that is legendary. So I ordered the husband/lover/gofer to stop by the takeout counter on his way home from work and bring home a quart of it.
Directions:
Drape a slice or two of the lunchmeat over each muffin hole of your muffin pan, then shove them down in. Don't worry if they are bunched up in there. The ham will form edible bowls with crunchy edges after baked.
Fill the ham bowls with the macaroni and cheese.
If you want to get fancy, and frankly I think these mac 'n cheese cups looked fancy enough for company,
Pop them in your preheated oven at 350 degrees for about 20 minutes.
Remove them and let them sit for about 5 minutes before serving.
I served these mac 'n cheese bowls with a salad and it was a satisfying and tasty meal. Leftover mac 'n cheese cups are easy to pop into the microwave and have at lunch another day.
Personally, I think any meal that includes macaroni and cheese is a winner.
Now you went and made me hungry. Instead of reading blogs, I now must go get me something to eat.

I saw Anon comments - and yes, the sodium would be a bit much, but you can purchase lower sodium ham [and washing it removes even more of the sodium] and if you make your own mac and cheese you can control the sodium there, especially if you use a mix of swiss in it, as that is lowest in sodium [for a cheese]. Besides - you could always just eat one. They look delicious. I may have to treat the family for lunch next week. :)
And that is a gorgeous salad - what do you have in it? YUM!
